Childhood Dream traces back to my years at Vatel, during culinary and hospitality training.
While rotating through the pastry department, there was one moment every student looked forward to: the return of the dessert trolley from the gastronomic restaurant.

Dozens of refined pastries would come back, elegant, technical, impressive.
Yet, every time, almost everyone reached for the same thing: the cheesecake.

That was my first real encounter with no-bake cheesecake, simple in appearance, but unmatched in texture and comfort.
Creamy, smooth, and instantly familiar, it stood out not by complexity, but by how effortlessly it connected with everyone.
